The wines produced are dry or semi-dry whites—lively and fresh, with fine bubbles and fruity aromas—that reflect the unique terroir of Gaillac.
Sparkling wines from Gaillac are also known as "méthode ancestrale" or "méthode gaillacoise."
This is a traditional method of sparkling wine production. It differs from the Champagne method in its simplicity and natural character.
In fact, the traditional method does not require the addition of sugar. The second fermentation takes place in the bottle through the natural fermentation of the grapes’ residual sugars.
This method produces fruity and fresh sparkling white wines, characterized by aromas of green apple, pear, and citrus. The bubbles are fine and elegant, and the palate is lively and refreshing.
Wines produced using the traditional Gaillac method are prized for their authenticity and artisanal character. They offer an excellent alternative to champagnes and other sparkling wines that are more complex and elaborate.

Pale, bright yellow color with light, fine bubbles.
The nose is delicate, fresh, and elegant, with very fruity notes of apple and pear.
On the palate, it is fruity and tangy, with fine bubbles and a beautiful balance, where the aromatic freshness of the apple lends the wine a crisp quality.
Enjoy as an aperitif or with dessert on special occasions.
Serve at around 8°C.
