En del El: The appellation’s signature grape variety, En del El produces dry or sweet white wines characterized by great finesse and freshness. The dry wines are distinguished by floral and citrus aromas, while the sweet wines develop notes of honey and dried apricot.

Mauzac: This hardy grape variety produces lively, crisp dry white wines with aromas of lime, grapefruit, and white flowers. They are perfect with seafood, fish, and salads.

Sauvignon Blanc: A well-known international grape variety, Sauvignon Blanc expresses itself in Gaillac with intense aromas of redcurrant, lime, and acacia. Sauvignon Blanc white wines from Gaillac are elegant and aromatic, often with a mineral finish.
