Al Couderc
This is a history dating back 2,000 years, shaped by climatic conditions particularly suited to viticulture and by an ideal geographical location on both sides of the Tarn River.
Located in the town of Labastide-de-Lévis, Domaine Al Couderc spans 11 hectares of vineyards planted on clay-limestone and molasse soil. Perched on the first hillside, facing southwest, it overlooks the Tarn Valley. In Occitan, “Couderc” means “the bend,” referring to the shape of the hill.

The Gaillac method, a traditional method of producing sparkling wine, is distinguished by its simplicity and natural character.

Artisanal expertise dedicated to quality:
Several generations of winemakers have succeeded one another at the estate, bringing with them artisanal expertise and a sincere, intimate approach to viticulture.
After gaining experience at several wineries in the Gaillac region, Fabien Rouffiac took over the property in January 2016. The decision to cultivate the vines using organic farming methods quickly became a natural choice. Day after day, he works with passion and conviction to ensure that the vines, shaped by nature, give their very best, delighting the palates of all wine lovers.

As soon as the sun rises, life comes alive in the estate’s vineyards, where Fabien Rouffiac devotes himself to meticulous and passionate work throughout the year.
Winter: Pruning, a promise of a bountiful harvest
While the vines are still dormant, winter is the season for pruning. This is a crucial time that determines the future structure of the vine and the quality of the upcoming harvest. Each vine is pruned with care, using a traditional technique passed down from generation to generation.
Spring: The vines come to life and new growth begins
In the spring, the vines come to life under the sun’s rays. The buds swell, the leaves unfurl, and the first flowers appear. This is a time of intense vigilance, as the vines are delicate and vulnerable to diseases and pests. Fabien carefully tends to their protection, prioritizing sustainable and environmentally friendly farming methods.
Summer: The vines flourish under the Gaillac sun
Summer is the season when grapes grow and ripen. The clusters soak up the sun and sugar, promising a bountiful and flavorful harvest. Fabien checks on his vines regularly, closely monitoring the grapes’ development and the change in their color.
The Grape Harvest: A Time for Sharing and Fellowship
At the end of summer, when the grapes have reached optimal ripeness, it’s time for the harvest. It’s a bustling time of year as we gather the vineyard’s precious fruit. The grapes are picked with care and respect to preserve their quality and freshness.
In the cellar
Beyond the sun-drenched vineyards, a crucial stage in the winemaking process takes place in the estate’s cellar: vinification.
The work in the cellar is much more than just a series of technical steps. It is a symphony of precision in which every movement counts, revealing the essence of the terroir and the grape variety that lie behind each bottle.
Harvest Reception: The Fruit of the Vineyards' Labor
At the end of the harvest, the sun-kissed grapes arrive at the winery. This marks the beginning of a meticulous process where every step counts. The grapes are carefully sorted, keeping only the finest and healthiest ones.
Destemming and crushing: Releasing the aromas
White grapes are usually destemmed before crushing, which involves gently crushing the berries to release the juice and pulp. For red grapes, it all depends on the style of wine being produced. Whether the grapes are destemmed or not, crushing helps extract the valuable tannins and aromas contained in the grape skins.
Pressing: Extracting the precious juice
Pressing is a key step in the production of white and rosé wines. The juice from white grapes is gently pressed to extract as much flavor as possible, while rosé grapes undergo a shorter maceration period to achieve their characteristic color.
Fermentation: The magic happens
In the coolness of the tanks or in wooden barrels, the juice transforms into wine through the action of yeast. Whether it’s alcoholic fermentation, which converts sugars into alcohol, or malolactic fermentation, which softens the acidity, this natural process is crucial to the development of the wine’s aromas and character.
Breeding: Refining the Profile
After fermentation, the wines enter a maturation phase, a period of rest and aging that can last from a few months to several years. Depending on the desired style, the wines are stored in tanks or French oak barrels, with each type of container imparting unique notes and complexity to the wine.
Racking and fining: Stabilizing and enhancing
During aging, the wine is regularly racked to separate the natural sediment that forms at the bottom of the tanks. Fining may also be performed to stabilize the wine and give it perfect clarity.
Bottling: The culmination of a long journey
Once the wine has reached its peak, it is time to bottle it. This final step is carried out with the utmost care, with each bottle being corked, capped, and labeled meticulously.
